The material of the propeller accounts for a very small amount of the propeller's performance. The majority effect comes from the propeller's geometry; compare: pitch, diameter, number of blades, rake, and cupping.

Very nice write-up of your observational and statistical comparison of the two boats. When I choose to move up from a 170 Montauk to the 210 Montauk I was also struck by the size of the boat. The some T-Tops fit very close to the console. I believe that most of the weight will be directly over the console area so much closer to the bow, possibly adding a small benefit of some additional weight forward:
