Compared to your RIB or the new RIB the 150 could handle your 4 adults with some gear but there won't be any room left. 5 would be too crowded for open water. I have used 1/2" thick high density foam with adhesive backing that lasted many years and it also gives you sound deadening advantages.
Yes a fluke anchor will damage it over time but it is easily cut with utility knife and/or scissors.
Last but and least an old beach towel works great too.

I believe a cover when trailering a distance over 100 miles is better protection than no cover. From my experience there aren't many power boats less than 30' that give you a very-dry ride on Lake Michigan on a "normal" nice day with a 7-10 knot breeze, no matter what the hull design.
