We had our 2006 BW Ventura 210 in Croatia for about 7 years, it's been great but we are looking to make a handful of modifications to better adjust it to our needs here.
1. Bow Rail - currently the stainless steel bow rail goes across the bow making it difficult to access without jumping over which is dangerous. All mooring in Croatia is from the front bow, so we are trying to determine a good way to modify rail so access over the front is easier. Has anyone done any modifications and if so do you have pointers on how to do so?
2. Toilet removal - our Whaler has a porta potti which is tied to a holding tank where waste can be pumped out. Unfortunately, Croatia does not have pump out facilities so we cannot use the toilet. It would make sense to remove it to get more dry storage. Is this a possible modification?

Both modifications can be done without harming the value of the boat. The toilet removal should be straight forward. When you remove it with the tank and hose you'll want to make sure the gasket at the pump out fitting is not leaking. I would store everything so it can be installed again should that be desirable in the future. The bow rail can be cut in the center if there is no center line stansion supporting it. A skilled metal worker can get the job done. I've seen bow rails as you describe with the center ends forming a loop on each side which can be used as good hand holds. A stansion may be needed for each of the new ends for added support. If the rail modification is well executed it will look OEM.

I recently read of a member who added a hinge to a section to allow a trolling motor.
Why not add a hinge to open the center? Adds to existing functionality.

Thanks both for your feedback. If you have a picture of the hinge it would be great so we can discuss with our metal guy in Croatia to see what is possible.

Removing the toilet should be straight forward. Is the holding tank located away from the toilet? Do you want to remove the holding tank?
In case you may ever need to reinstall the toilet and tank I recommend any electrical cables be kept intact and labeled. The same applies to any hose(s) and clamps. The cables are probably connected to a buss and or switch so disconnecting them should be easy. You may have to pull the cables through a conduit or cable way to remove them. If they must be cut they should be labeled, isolated and sealed to prevent any accidental circuit being formed. The hoses may need to be plugged before removal in case they contain contaminants.
Without seeing how your toilet and holding tank are arranged it's difficult to offer advice about their removal. If you want to provide a link to the Boston Whaler drawings that apply that would be helpful.
Have you considered replacing your toilet with a marine toilet designed for direct overboard discharge? If you have ladies aboard they would probably appreciate having a toilet available.

The Ventura 210 has a lot of bow rail to work with and it seems if the bow rail was cut in the middle you could split the bow rail and have it fabricated to drop-down and connect with the deck close to the front of the anchor locker:

This is a typical hinged bow rail (non-BW boat):
Because of the large unsupported length of your bow rail, I would be inclined to fabricating a split bow rail, it would create a very strong hand-hold in the bow. Adding a hinge in such a large unsupported length of railing could create problems with the ability of the railing to provide structural support if a person were to need it in case of an emergency.

1. We removed the porta porti without any major difficulties just unscrewed the unit and pipes. There were 2 pipes in the back , one was going to the waste out which is on the port side of the boat. Not sure if our boat had overboard discharge - if it did it would be great as this would solve our problem and we could use the toilet as Croatia does not have pump out facilities where we boat.

Pred--there have been discussions regarding [RNR MARINE] and their various products. Decent quality, not inexpensive.
You have the right plan. Add a zipper to the existing bimini and add a second part with associated rails.
Given you are in the EU, I would take the photo and go to a local canvas fabricator.
