I have a 1970 Sakonnet. I keep it in good shape restoring or replacing the wood as necessary. The suface on the top of the console eludes me however. It has been refinished several times but the elements (including spilled gasoline)are always ahead of me. I am thinking of installing a 1/8 inch thick
brass plate as the working surface. Any thoughts/advice I should consider?

I would think the brass plate would be murder to try to keep from tarnishing... I would look at possibly vaneering the top with mahogany and then revarnishing... If you really want to go with a metal top, how about stainless steels sheet metal... You can order this from West Marines metal shop in any thickness and size you want... http://www.onlinemetals.com/index.cfm?partnerid=70

I would use something nonconductive, esp if you're planning on running wires from instruments through the top. Starboard? Just my .02...
