I need some help in preparing to transport two 55 HP, 240 LB outboards ~ 300 miles by car.

I can use either a Ford F-150 pickup of a Chevy Suburban to do this. I can see advantages/disadvantages for both, but am planning to use the Ford.

Any suggestions as far as securing the engines in the bed? What is the best orientation in which to place engines for the ride?

On their sides with cowls/props removed. Use a mocers blanket if you have one. Blankets make sliding the engines out easier. Would not worry about tying them down but if you can do it...do it.

Bolt them onto the tail gate... rubber pad optional!

Seriously now...

Everytime I try to move an engine, it ends up rolling over on it's side potentially damaging the shifter etc..

Last time I simply bolted the engine (a classic Westbend 45) to a 2x6 with vertical 2x4s that fitted into stake pockets... making a mini stakerack for the pickup... I lowered the engine from the up-position until the lower-end rested on the bed of the truck.. about a 45 degree angle... easy as pie. The engine was secure and didn't move.

For 250 pounds... you have a forklift? Same idea as the truck with a 2x6 nailed securely onto an old pallet???

I definately would tie an engine down... 250 pounds makes great litle missle.
