I have not heard of Strip Away but there are generally two types of paint & varnish remover sold. The one type generally marketed as "safe" contains dimethyl adipate and dimethyl gluterate as the active ingredients. It tends to be slow working and its activity seems to be very temperature dependent. The other type contains methylene chloride, which is known to be a carcinogen, as the active ingredient. My experience is that it is very fast working compared to the "safe" product and will cut through many layers with one application.
I am presently in the process of refinishing the wood in my 15 Super Sport. I used different brands of the "safe" type to strip the varnish and they all seem to work about the same. I recommend that you try one of the "safe" types first to see if you can get adqequate performance before using a product with methylene chloride (I make every effort to avoide exposure to that stuff). If you must use remover with methylene chloride make sure you use a respirator and are completely covered to prevent contact.
In my case, I was fortunate that the prior owner did a poor job of refinishing and so all of the varnish (about one layer) came off easily with the "safe" type varnish remover. Quite a bit of sanding with an orbital sander was still required to get to the "fresh" wood. Be careful sanding the bow locker cover because there is only a thin mahogony veneer covering the plywood.
