If I stripped everything off the hull inside and out, what would the approximate cost be to have someone do the exterior and the interior also [with new gelcoat]? The boat is a 1983 Montauk and is really good shape for its age but has nicks and old screw hole here and there.

You will be much more likely to get an accurate estimate of the cost of having the work done by a repair shop in your area if you get an estimate of the cost of having the work done by a repair shop in your area. Prices for this type of work seem to vary quite a bit by region and by season.

If the hull is in "really good shape" it probably does not need to have the entire boat re-done. You could probably just do some patching and buffing and make quite a restoration.
