I've never raised my trailer onto blocks for the winter but notice many in my area on blocks. With the boat on a new trailer this year I'm curious as to the benefits of raising the trailer onto blocks.

Only benefit is it makes it harder to steal, especially if you remove the wheels, and you won't get flat spots in your tires.

I have always put my trailers up on blocks. Several reasons. Takes the weight off the springs and tires. Sometimes it has to get jacked up just to get the lower unit all the way down if you are in an area with freezing temperatures. If so and you leave the lower unit all the way down and almost touching the ground, the blocked up trailer can't come down on the skeg if one of the tires go flat. It is more stable for getting in and out if you are working on it.

I'm sure there are more reasons.

If nothing else, put the tongue on blocks. A lot of those front jacks (Fulton) aren't real substantial.

And your point on lowering the engine is well taken, no matter how you do it. My boat is stored on an uneven gravel driveway and by the time the wheels dig in a bit, I actually have to dig aside some gravel before the skeg on the motor will go all the way down.

Even with a empty trailer (boat is in indoor storage) I always put the trailer up on blocks. If nothing else it helps the tires from getting a flat spot.
