I am removing delam plywood from the center-deck of my 1980 Outrage. (http://continuouswave.com/whaler/reference/outrageRestore.html)
After gingerly peeling off what I could by hand and pry-bar, I tried out my Rockwell Sonicrafter (http://www.rockwelltools.com/US/Sonicrafter-P1353.aspx). This a tool I was given by my brother-in-law and that I passed off as a gimmick. This thing very effectively and safely skimmed off all the excess plywood without even skinning the fiberglass. I love this tool for many other uses as well; one of them being precise cuts applications. Good luck...

I have a friend who did this by using a router attached to a sled to ride a set of set of rails made from 1" water pipe. He hogged most of the material with a core box bit, and then finished with a straight bit. He said there was about an hour of set up, and then he did the entire job in 2 2 hour sessions.

I also think a dado blade in a worm-drive skill saw on a similar rail and sled would work well.

I have the Fein multi-tool, which I used to remove delaminated plywood from the inside of my console. I can't imagine how I would managed this without this fantastic tool.

The Fein is the same tool as the Rockwell; think better but more expensive...They are all fantastic and as you say, as a frame to finish carpenter, I don't think I could do without it now....Where they get you is like HP printers; the attachments and new blades are pretty expensive....
