I spent some time, with help from this forum, tweaking the prop pitch and engine height on my Outrage II 17 to great effect. Now I wonder if the same is possible on my twin rigged Conquest 23. It seems a bit more problematic since the engines are placed asymmetrically with repect to the deadrise at the stern, rather than central as with a single.

Other than prop pitch tweaking, sould I play with engine height, or leave things as the factory set it?

With the motors mounted as set by the factory, I never had any problems or hint whatsoever with blowout or ventilation on my Conquest. Even at high load, going slow, in rough seas. So, I think there is some margin to play with mounting them higher, and seeing how the boat does. As rigged by my dealer initially, the leading edges of the motors were towed out about an inch. after a few years use that way, I reset them to tow the leading edges in a bit based on what I read in other forums saying it better lined up the props with the slightly angled water flow coming off each side of the v bottom. The toe in change made absolutley no difference in top speed. But, it did substantially help the steering and reduced (a lot)the tendency for having to make a lot more steering corrections running in bow or stern quartering seas. It also did tend to spread out the white foam area in the middle of the wake from the exhaust a bit more at higher trolling speeds used for Dolphin or Sails. That is not really a good thing as it shrinks the area of clean water trolling allies behind the boat. But I didn't do enough trolling anyway for that to offset the gain in handling.
