I would like to instal a car battery in my Sport 11 under the middle seat to operate the lights on my boat and to install a fish finder.

How upset will be the ride in my boat with this battery? How long can I expect the battery to last using the fish finder and/or lights?

The fishfinder will consome very little power (< one amp).
The lights will be a couple of amps. Typical car battery
is 60 amp-hours and will run it all night now sweat.

So even a motorcycle battery would probably do.

Does your motor have a battery charging output?
