Does anyone know how much more deck space there is on a 23' conquest compared to 21'. And is there any other advantages or disadvantages of upgrading like fuel economy or diferences in the ride and handling.

I looked at both the 23 and 21 Conquest before finally choosing the 23. In terms of cockpit space, I'd say the 23 has twice the space as the 21. Two 2 extra feet in boat length pretty much went directly into the cockpit space.

In terms of ride, I can't tell you because I didn't sea trial the 21.

Being the previous owner of a 23 Conquest and a 21 Outrage, and just imagining the ride of your 21, I would save up and move to a 255. The 23 rides nicely, but not worth the money for a two foot upgrade and minimal difference in features.

Depending on power options, twin or single will decide what the fuel difference would be. Either way it should not be drastically different than your current fuel bill.
