I plan longer boat trips with a 2019 170 MONTAUK with 115-HP engine with 20-gallon fuel tank capacity. I realize that the wind, currents, weight in the boat, etc., will be factors.
What range can I expect?

Use the mileage figures you have experienced with your boat, so far. I believe the engine and a display--if connected by your network--will provide fuel consumed and hours operated. That information should allow you to closely estimate your expected fuel consumption per hour at cruising speed over any distance.
If the needed data is unavailable begin keeping a log so you can track fuel used by fuel added at each fill up.

My 160 Dauntless with 115 FOURSTROKE engine comfortably gets 5-MPG at 22 to 25-MPH. A 170 Montauk hull and newer engine are both perhaps slightly more efficient, so I think you could use 5-MPG as a conservative estimate. Hold back one-third of your fuel if you're going offshore or one-quarter if you're not, and you're looking at a working range of 66 to 75 miles. Keep in mind that if the weather gets rough your efficiency may be cut in half.

A fuel tank usable capacity for calculating endurance and range should be derated from the stated capacity by at least five-percent to perhaps ten-percent to account for the residual fuel left in the tank when the engine will no longer be able to draw fuel from the tank.
In your case of a 20-gallon fuel tank, you should figure a usable capacity of 18 or 19-gallons. Then from that capacity figure, allot one-third as a reserve for any trip planning of range or endurance.
The boat and engine fuel economy will be highly dependent on throttle setting and boat speed attained, so a figure for miles-per-gallon that will be achieved should also be conservative.
Modern outboard engines are usually able to provide the instantaneous fuel flow rate. If the boat speed is known, then a FUEL MANAGER function in a display device can usually provide the instantaneous fuel economy in miles-per-gallon. These figures can be know with good accuracy. Generally the precise amount of fuel in the fuel tank is not know with particularly good accuracy, and that imprecision must be accounted for in calculation of range and endurance at any particular moment of boat operation.
