Where can I get a leaning post for the 1997 OUTRAGE 20?
I prefer an original Boston Whaler leaning post, but I am open to adjustable leaning posts.

While the original leaning post is not available, take a look at Todd's offerings.

If you really want close to original, contact Ray Martin @ http://www.MartinMarineDesign.com. Ray can fabricate one that is very close.

Adjustable leaning posts are ones that have legs with the ability to raise and lower the pad.

Unless a particular boat is going to have helmsmen of vastly different height, I don’t see where being able to adjust the height of the seat of a leaning post is a particular advantage. To me it seems more likely the seat height would be set once and stay at that height.
As far as a fixed height leaning post, I would expect, if a leaning post were to be custom fabricated to order, the height would be part of the “custom” element of getting one made to order.
The actual height of the seat cushion top surface is going to depend a lot on the thickness of the upholstery.
Also, if the boat already has the usual twin pilot seats with pedestal bases, the easiest adaptation might be to remove the seats and use the pedestal posts to hold the leaning post—assuming there was enough strength to resist the constant push-back force from the person or people leaning against the leaning post.
I also think the chance of finding a Boston Whaler c.1997 leaning post is not good. I would expect that option was not sold in huge volume, and they would all still be in use on the boat they came with.
Really, the most popular seat on an OUTRAGE is a reversible pilot seat (RPS), and my initial though was perhaps the odd name “adjustable leaning post” was intended to mean Reversible Pilot Seat. Perhaps the questioner can clear up what he meant.

We often used the RPS in it the next-to-forward-most position as a leaning post when on plane.
An advantage of an adjustable leaning post allows it to be used as a seat when in a lowered position. Many, or most, leaning posts have a lowish back rest. Possibly to prevent anyone losing their seating by sliding too far aft.

I have the reversible pilot's seat from a 2001 Dauntless 22 for sale. Picture below. Let me know if you are interested.
