My existing rub rail base was installed with one piece on the starboard side and one piece on the port side from the stern corners where they meet at the bow. Can I replace these 2 pieces of base with one piece of base from stern corner to stern corner and no join at the bow?

I don't think the sharp V of the bow will allow the channel to bend enough.
You might try to apply heat (hairdryer, not heat gun) at the time you get to the bow to allow it to bend around the V. A set of extra hands is recommended.
