I need to replace the steering on our club's old Katama. I understand that 18ft is the right cable length. What about using the Teleflex rotary helm instead of the rack and pinion 'T' helm that is in there now? Is there enough room for the rotary?

It also sounds like I should use a piece of King StarBoard to raise the new helm up off the console a bit.

My old Katama had the rotary helm installed when I got it from the dealer, so one should fit on yours too. The fit was tight, but fit it did. There was no spacer used in the installation but the steering shaft was long so there was a high beveled bezel used. The helm worked flawlessly for decades with little maintenance, but two push-pull steering cables did freeze up on us. Sorry but I don't remember the length of the cables installed or the model of the helm.
