I would like to know is if I were to wrap mahogany with light 3 to 4 oz glass and then cover it with a good UV rated clear coat would the color and grain show through? And is this a recommended practice?

What many boaters use is multiple coats of WEST SYSTEM epoxy, and then several coats of UV inhibited varnish. The grain will show through (no fiberglass cloth can be used)

What condition is the wood now? If its really tough, you may want to talk to Mike at Nautical Lumber.

I have very successfully used three coats of West System on both teak and mahogony and then covered it with three coats of ZSpar Captains varnish. Sanding between coats. It turns out looking like glass and is very durable. Make sure you use the right formula of hardener for West System so that it dries clear.
