The little ball and spring latching unit [catch] that is attached to the console door frame on my 1987 Outrage 20 no longer grabs the latch bar of the lock securely enough to keep the door closed. Where can I find a replacement?

I have the same latches on my Montauk hatches. The prices in Jim's links are pretty low, by boating standards. If you prefer to rehab the existing latches, you may be able to replace just the internal springs.
The ends opposite the ball have a setscrew that can be removed with a flat blade screwdriver. Take out the screws and you can remove the ball and springs. My springs were completely corroded. I bought replacement springs at the hardware store for about $0.25 for each latch. I cleaned and lubed the balls, inserted the lubed replacement springs, and replaced the set screw. The latches are now as good as new.
I got the springs at my local Ace Hardware Store, which has a nice selection of hardware. Make sure the one you get is not too stiff. You can adjust the length by stretching a short spring, or cutting off a few coils for a spring that is too long. You may be able to increase the clamping strength by adjusting the depth of the set screws.
Sounds like a lot of work to save $10!

I need to replace the missing latch(es) on my 1988 Montauk.
Can you tell me how many are used on the console hatch located directly below the helm?
