If so, they make a standard copper core set and a graphite conductor set for HEI systems - would either of these be okay or should I just track down and purchase OEM plug wires?

You can buy lengths of Packard 440 metal-core plug wire off of a 100' roll at your dealer, then either reuse the ends if they are in good shape or buy new ones.
The other choice is to purchase the individual plug wire kits from Evinrude.
Either way, you get the correct type and size of wires.
