I ran 6 gal of pre-mixed in conjunction with the oil injection to break in a new Merc 2s.
Now I have 20+ gals of pre-mix that I want to use up. Other than snotting up a few plugs, will running another 20 gal of double oil hurt anything?

Why not just add more gas?

It shouldn't hurt anything. My Johnson required double oil through its first 10 hours of running. That worked out to be about 8 6-gallon tanks of gas. I can't see why it would be a problem in the merc. If it concerns you, burn off about 5 gallons of the premix and then add straight gas to dilute it even more.
