Beyond the SONAR function, are there any differences between the Garmin GPSMAP 546 and 546s? I'm surprised that the 546 is often priced similarly to the 546s.

No. See this review.
The Garmin 546 is now discontinued, having been replaced by the GPSMAP 547xs with faster GNSS receiver and pulse-compression (or chirp) SONAR.
