I [am] going to get a new 2005 model [VENTURA] 210 from our local dealer, but it has no engine. The Boston Whaler website recommends [that the boat be fitted with] a maximum of 250-HP Mercury Verado for the boat, but with the engine maximum weight limit [I] can put a 300-HP Suzuki. The Suzuki is lighter than the Mercury and can withstand our summer weather, which is about 120-degrees, better than the Mercury. [I] need suggestions please.

Engine manufacturer choice these days boils down to service. Who is local to you that is professional, has certified mechanics and has good customer service.
Presume the boat will need new gauges/throttle/harnesses since the prior motor was most likely an Optimax and the Verado has DTS and the other bells and whistles. Given that there is benefit to staying with the Mercury pre-rig.
As for HP, if you insure the boat, check with your carrier if they have a limitation on overpowering. If they do, shop around.
I think Tom (Bluewaterpirate) has a late model Ventura 210 and can provide some performance information on his rig.

I've been running a 210 ventura for going on eight years. The boat came rigged with a 225 Opti, that is still on the boat (over 3400 hours on it). I have a new 225 Opti sitting in a crate that I will install this winter. I looked at the all the options when I was considering repowering and always came back to the 225 Opti.
The Ventura is a beast when it's fully loaded close to 5200 lbs so you need could lower end torque. It sounds like you have a good Zuke network at your location so go with the Zuke. You don't need 300 hp .... buy the 250 Zuke it will suit your needs and give you many years of use. One other thing, if the hull your looking at doesn't have trim tabs .... install some.
Here's a short video of my wife and I coming back from offshore. You can get an idea of the wake pattern etc.

The 210 Ventura is on hellva boat .... it's a battleship for sure.

Hey folks. Does anyone have the performance specs for the 210 Ventura with the 225 Optimax? I'm interested in mph at 4000 rpms and wide open.

I would try rigging with triple Mercury engines. I would use a 115-HP 2+2 Mercury classic two-cycle engine as the center engine, and flank it with two 90-HP Mercury classic two-cycle engines on either side. This would give you a total of 295-HP, and the three engines would probably only weigh about as much as a VERADO.

I would recommend repowering with a re-badged Ficht or as most people know them, an Etec. It is super light which will give you a warm and fuzzy feeling as you are waiting weeks for parts to from one of the six dealers left.

This is a clipped response from another forum member with the same boat and motor combination in your post:

It's really hard to compare the Verado and Yam/Merc because they are totally different engine (look at the rpms numbers produced by the Verado). The key to these numbers is the how the Yam/Merc is propped, mounting on the transom, and how it's trimmed. The 210 Venturais a heavy boat, mine comes in right around 5200 lbs fully loaded.
I can run all day at 4200 rpms that gets me 32 mph. You have to look how the boat was loaded for the test conducted by Whaler. I know your friends performance numbers will be lower than the Opti and Verado by at least 20 % if the boat/motor is setup correctly.
Ventura dry weight (no engine) = 3300 lbs
Gas 92 gallons = 621 lbs
Water 10 gallons = 65 lbs
Motor (Yam/Merc) = 587 lbs
2 Occupants = 350 lbs
Total= 4923 lbs
